The purpose of this ballot is to:
- Clarify the requirements for the floors of floorless walk-in or roll-in oven or proofing cabinets. Currently the standard is silent and provides no guidance. This proposal requires that floors of floorless walk-in or roll-in ovens and proofing cabinets meet food zone requirements. A literature section has been added to provide guidance to the regulatory community.
- Propose an exemption for enclosed space requirements of NSF/ANSI 4 for microwave oven cavities.
- Propose a marking in lieu of performance testing and to account for a specific type of heated cabinet not intended for holding potentially hazardous foods.
- Update boilerplate language.
