During a handful of teleconferences with the Dinnerware Task Group, and now 2 with the Food Equipment Fabrication Task Group, the topic of the retirement of Standard 36 has been discussed in great detail. In question is not the retirement of Standard 36 itself, but what, if any, of this Standard should be carried over to Standard 2.
One topic of particular interest is that of product draining once washed and sanitized. Standard 36 currently reads:
Shape and size
Dinnerware products shall be manufactured so that their shape and size permit cleaning and sanitizing of all surfaces when properly racked and washed in a commercial spray-type dish¬washing machine. Their shape shall also permit draining of wet surfaces when properly racked.
Regardless of how it would read in Standard 2, there has been convincing arguments from both sides whether or not a form of this requirement should be added all.
