I considered voting affirmative with comments, but I'm not certain how to make all of the revisions.  The proposed change reinforces that all food contact surfaces are exposed to inoculum.  But then the 200 ml draws "ensure the entire food contact flow path is exposed to sufficient challenge".  I'm unsure what that means.  Dispensing three consecutive samples will not have this effect.  Is the goal to draw the samples at intervals to get a little at the beginning, some more in the middle, and a third when the unit is nearly depleted of challenge suspension?  I suggested "at intervals" and struck the remaining part of that sentence, but it may be adequate to just say, "Collect three 200 mL samples from the dispense point," and then keep the last sentence.

Submitter Proposed Solution

6.1.2.1 The equipment shall be filled with the E. coli suspension.

6.1.2.2 The equipment shall be operated so that the E. coli suspension is dispersed throughout the equipment and all food contact surfaces are exposed to the E. coli suspension. E. coli suspension shall be dispensed through the equipment, cCollecting three 200-mL positive control samples from the dispense point at intervalsto ensure the entire food contact flow path is exposed to sufficient challenge. The average of the positive control samples shall serve as the initial inoculum density (Ni).
